Dairy Free Cinco De Mayo Queso Dip

This dairy free, cheesy queso dip is super easy to throw together, absolutely delicious and won’t weigh you down. Paired with organic tortilla chips, you will swear your eating the full fat, cheese version.

I highly recommend buying organic tortilla chips, or organic corn in general, for a few very important reasons. Corn is one of the top three GMO crops grown in the US. Roughly 90% of all corn in the US is GMO. Genetically modified foods are more than meets the eye.

What are GMO’s?

Genetically Modified Organism’s – Organisms that have been created through the gene-splicing techniques of biotechnology (also called genetic engineering, or GE). This relatively new science allows DNA from one species to be injected into another species in a laboratory, creating combinations of plant, animal, bacteria, and viral genes that do not occur in nature or through traditional crossbreeding methods.
In other words the GMO corn could be bacteria from an animal along with other species to actually make up the corn. Gross!! And super scary

In 30 other countries around the world, including Australia, Japan, and all of the countries in the European Union, there are significant restrictions or outright bans on the production of GMOs, because they are not considered safe. So why is the majority of the food available to us here in the US GMO?!

I don’t know about you but I expect real food and not bioengineered science projects that show up as something their not. Thats another blog

🌟Dairy Free Queso Dip

*1 lb cauliflower

*2-4 cloves of garlic

*teaspoon onion powder

*Himalayan pink salt to taste

*1 cup raw cashews (soaked in hot water for 15 minutes and strained)

*12 oz jar roasted red peppers strained

*2 tablespoons nutritional yeast (this is how you get that super cheesy taste)

*1 jalepeno

*dash of cayenne pepper

*juice of one lemon

*2 roma tomatoes

*1/4-3/4 almond milk (depends on how thick you want it – start with 1/4 cup and add a little at a time until desired consistency)

Boil cauliflower with garlic cloves for 10-15 minutes until tender

Add cauliflower and rest of ingredients to a vitamix or other high speed blender and blend until smooth and creamy

🌟Add some to a dish before serving and mix in a can of Fire Roasted Diced Tomatoes with Green Chilies (strained and pressed to release as much juice as possible)
This really completes it!

This yields a good amount so I split up and froze half for another time

💫Can be used as a dip for chips, veggies, as a sauce over meat, pasta (mac and cheese-minus the tomatoes), zoodles or even drizzled over steamed veggies.

All around great sauce that is super healthy and sure to pleas
